Baja Tempeh Taco Salad

Papaya Salsa is a little sweet (the ripe fruit), a little tart (lime juice) and a little bit spicy (jalapeño) – or very spicy depending on the amount of jalapeno that you add. My favorite corn is actually early September corn here in the Pioneer Valley, an area that encompasses parts of northern Connecticut and our area of western Massachusetts.
